A Burgundian winegrower and winemaker at the head of Domaine Aegerter (Nuits-Saint-Georges), Domaine Clavelier (Comblanchien) in Burgundy and of the Hérout cider house in Normandy, Paul Aegerter is a passionate man, nurturing an ideal of perfection.

Founded in 1988, thanks to the acquisition of a first parcel, 1.17 hectares in one piece on the terroir of Nuits-Saint-Georges Les Plateaux, Domaine Aegerter is today the owner of 14 hectares and vinifies, thanks to leases and grape contracts, more than 50 hectares throughout Burgundy.

When Paul discovered Provence, it was an immediate love affair. In 2010, Paul and his friend David launched Jolies Filles. A fresh and elegant rosé with a dream in mind: to become the owner of a château in Provence and reveal the richness and diversity of the terroirs. 10 years later, this lifelong dream has come true thanks to Château Yssole.

Located in Cabasse, in the heart of the Var, Château Yssole is a wine estate of nearly 18 hectares cultivated using sustainable agriculture.

Thanks to the know-how of Paul, Laurent Natalini (estate manager) and Michel et Marylin (piece worker), the wines of Château Yssole have been designed like the Grands Vins de Bourgogne: elegant, fine wines, produced by meticulous vinification and blending of each plot to reveal the characteristics of each terroir.
