Provence, a rich and diverse terroirs

Rich and varied soils and subsoils

Cabasse is part of limestone Provence, where the soils are composed of sandstone, limestone and marl (red clay and colluvium), a legacy of the Triassic. The geological diversity of the vineyard is such that the soils and subsoils of each parcel are different and give our wines their uniqueness.

The Climate

In the foothills of the Massif des Maures, the vineyard benefits from a Mediterranean climate with a continental influence, with hot, dry summers and cold, sometimes harsh winters.

Combined with a south-south-east exposure, a preserved biodiversity and a soil favourable to the cultivation of the vine, allowing good water retention and consequently resisting drought, the vineyard enjoys excellent conditions to fully express the best of its terroirs

Suitable grape varieties

Each grape variety is unique and requires a soil adapted to its needs in order to fully express its aromatic qualities. At Château Yssole, 7 typically Provençal grape varieties live together and flourish on our plots. Grenache, Cinsault and Syrah reveal themselves and give an aromatic complexity and a beautiful freshness to the rosés, while Rolle and Ugni blanc offer minerality and freshness for the whites.

The Winemaker

The winemaker is a true conductor. Thanks to his know-how, he blends and magnifies the juices to find the right balance. Preservation of biodiversity, draconian control of ripeness, cool harvesting, cold work in thermo-regulated vats, little use of sulphites and punching down, etc. So many carefully thought-out gestures to intervene as little as possible and preserve the integrity of the berries.

Signore

On the heights of Cabasse, Signore dominates the well-named ”Plaine des Vignes”.

Derived from the Latin “Senior”, meaning “lord”, our Signore vintages bear witness to the rich past of this ancient Gallo-Roman city crossed by the Via Aurelia, which became a castrum several centuries later.

Signore Blanc

IGP Méditerranée

  • Grapes : Vermentino (Rolle), Ugni blanc.
  • Soil : Sols calcaires composé de gypse (roche saline).

  • Colour : Straw yellow with green highlights.
  • Nose : Intense aromas of pineapple and citrus fruit with a hint of vanilla.
  • Flavors : Great sensation of freshness and good aromatic length on a mineral and iodine finish.

Chabaud

Inspired by Henri Matisse’s paper cut-outs, the Chabaud cuvée is a tribute to Jean-Luc Aegerter, an art lover and painter.

Like an artist, Paul plays with the palette of grape varieties, meticulously blending each wine to find the right balance and offer a harmonious cuvée
